I want to know the energy cost of communication in WSNs. As you know every bit cost energy, and the more bits you have the more energy you consume, this because of the radio chip. The question, how much one byte roughly cost in micro joule.

In each proposed protocol, authors show thier power model. They have alot of assumptions. But if you are looking for real values of power consumption of each byte try to see data of the underlying wireless technology "WiFI, Zigbee, etc".
For the overhead, as mentioned each protocol should have its own overhead. However, most of the time, researches nigilct it. In LEACH and its children, overhead calculation was nigilected. However, it can be calculated in easy way from the energy model in thier paper.

It would depend on the radio manufacturer and each would consume different amounts of energy.
Also remember energy is consumed during idle periods and during reception as well. So you need to be clear as to whether you are only looking during transmission or averaging over idle / reception periods as well
