Alfalfa are typically high in the following constituents:
Vitamin K: 13% of the RDI.
Vitamin C: 5% of the RDI.
Copper: 3% of the RDI.
Manganese: 3% of the RDI.
Folate: 3% of the RDI.
Thiamin: 2% of the RDI.
Riboflavin: 2% of the RDI.
Magnesium: 2% of the RDI.
But it contains very less calories. One cup of alfalfa sprouts contains only 8 Calories. Therefore, I dont think much calories to be provided by Alfalfa to humans.
Thanks, But I intend to find indirect calories come to humans through beef or dairy products. it is a type of two stage analysis with some assumptions, I guess.
