If any compound is in one phase at room temperature and then attains some other phase at elevated temperature (say 350 ℃), then does that material continue to be in that second phase or will it restore the same first phase after cooling to the room temperature.
If the cooling is performed slowly, the compond recovers its low temperature phase, in some cases at a transition temperature slower than when heating (an example is supercooling of rain in cold climates). The temperature remains at the transition one as long as the two phases remain. The time during the compoud remains at this transition temperature depends on the rate at which the latent heat is evacuated.
If the cooling is performed quickly, a part of some compounds may remain in its high temperature phase. An example is steel tempering.
