Hello dear, from amplitude test you can infire the stability of an emulsion, since you can obtain a curve of stress vs strain. During this analysis occur the destructuration of the emulsion. From this curve you can see which is the maximum deformation and stress that can experiment your emulsión, before that it be broken. Best regards
