Nano particles offer certain advantages over other particle sizes. It is difficult to discuss this without specific examples. But the advantages are so generally applied that even processed foods are starting to utilize the technology. Ex: More even distribution, and some specific properties show up in nano additives that simply do not exist in larger particle sizes of the same material. In food such things can impact wet-ability, or flavor, or mechanical properties. One specific example: table salt particles. The smaller the particles, the stronger the salty flavor using the same amount of salt (more surface area). So certain foods (Potato chips in example) can have the same desired burst of salt flavor, but while using less total added salt (salt reduction becomes possible without impacting the expected flavor).
