I am learning ArcGIS and would like to know the step by step process on how to map electricity demand of a country. I would also like to know what datasets are needed to complete this task.
use the satellite data and map settlement area.
make it few class... based on settlement density.
estimate the demand by field visit for all these category (class)
calculate for whole area...

I agree with Mr. Firoz sir you can follow these steps. You can get satellite data from GLCF and Bhuvan also.
For a better representation, you can collect electricity data (i.e place by no. of the user) from local electricity office and put it on your work. I hope these will help you in your project.
If you are a learner, then just collect information regarding electricity (ie. population density, place by no. of users, lu/lc classification, etc.) and perform overlay analysis. hopefully, you will have a satisfactory result. In additional, you can just skip field visit (optional you can or not).
