I want to prepare a web application showing the real time position data of GPS mounted on vehicles on the map (e.g. uber and Ola vehicle real time location maps). The requirement is the use of open source software to create such real time web GIS application. Although the database (PostGRE SQL + Post GIS), middleware (geoserver) and front end (leaflet) are finalized, we are not able to find an interface to the GPS/sensors, how can we retrieve the real time information from the GPS/sensors and collect them on a centralized repository/database. SO that the data can be viewed in real time on the map like the proprietary Esri GeoEvent Server.

The Low power wide area technologies such as Sigfox, NB-IoT can also be an option. you can sense the data using LPWA end-devices that can be relayed through a gateway up to a network/cloud server. This data can be accessed through a web interface to any application you want. The only limitation might be the low data rate support hence frequent queries may not be accommodated.
