When we analyse Land Use/Land Cover along years, there are alot of techniques but when monitoring Land cover change along agricultural season, Is NDVI index adequate?
You can use different methods for this. I think you could use it but bare in mind that you can just detect the changes in vegetation cover, without vegetation cover you might detect different factors that could produce some variation in the RED and NIR bands such as humidity....
Could be a good idea to use some wetness index together with the NDVI.
I attached two papers that use the NDVI over different covers.
I hope this will help you

If you do not have experience yo can use some of the already estimated index with Landsat. In an agriculture season you can have serveral images of your study area.
