The boiling of liquid in contact with a solid wall at higher temperature than the boiling point of the fluid is a classical instability. Very high levels of heat transfer coefficient can be acheived on average but the fluctuation is large and very hot spots on the wall appear stokeastically. I feel we aught to be able to engineer the surface so as to control the heat transfer process and reduce the range of temperatures the wall sees. Does anyone have any insights or ideas about how we could control boiling heat transfer?
