i want to know the interaction between the generating of SAW and the finger patterns and who to relate this to signal processing processes

If you want to dive that deep into the matter ('solid-state physics'), you may well start with wikipedia ( https://en.wikipedia.org/wiki/Piezoelectricity or https://en.wikipedia.org/wiki/Surface_acoustic_wave ). Although not exactly what I'd recommend to an EE student.
Basicall spoken, the input transducer converts electrical into mechanical energy that travels down the SAW. The output transducer converts the mechanical oscillations received back to electrical signals. The 'how' is where physics starts...

the first two chapters considered in the first book are relatively easy compering to the third chapter,linear phase SAW filters
i cant know the interaction between
the transducer fingers and the SAW propagating throw them
how can exactly changing the patterns of the fingers changes the propagating wave
and led to eventually to change in the output signal
