How can the pH of a plant extract or fraction (dried) that is not soluble in water but only in organic solvent be determined. Considering the fact that when dessolved in an organic solvent, the pH could be affected.
pH of a solid cannot be determined nor pH is defined for pure organic solvents e.g. benzene. However you can measure pH of a suspension in water (at least in principle). What functional groups do you have on the molecule? What type of solvents dissolve it?
