By UV-vis it may difficult to say. But if you go through EDAX or XPS or even XRD, you can get some valuable information about Core-shell or alloy.

XPS is EDAX are the most suitable techniques for your purpose...However, if the size of the core and shell is in micrometer range, then you can use CONFOCAL by incorporating different flourescent dyes in the core and shell.
UV-Vis would be suitable only if you have very thin shell (atomic monolayer) - then plasmonic peaks both from core and shell should be visible - otherwise it has no use here.
