I have a DEM (raster) of a mountain and I want to plot in QGIS or ArcGIS a profile of its apparent horizontal thickness at a certain azimuth angle. I expect the resulting graph to look like this:

If I understand your question correctly, you might want to transfer your DEM to vector and then create "partitioned" line shapes. "Partitioned" means that you do not create one single line but instead create several line shapes of length x, which togehter create one line. After that you can run a spatial join between your vectorized DEM and your lines. One line then gives you the average height measured over the length x of the line element.

Create Contour Lines from DEM and create a cross section along horizontal path you want. from cross section calculate the thickness or average elevation.
Thank you, Ahmed. It is not quite that simple though. Probably my question is not clear enough. My apologies. Basically, I want to plot a d,z graph where d is the euclidean distance (sqrt (x^2+y^2)) along a horizontal path that traverses the DEM at a certain azimuth angle, z is the height at d and the d,z axes will contain a color-graded distribution of the apparent thickness of the mountain in several directions vertical to the horizontal line that transverses the DEM

Some or your terminology e.g., 'tickness' sounds a bit out of the DEM's field... Anyway, I think you may try to use the ArcGIS 3D Analyst toolbox/3D analyst tools/functional surface/Interpolate shape. It will allow you to extract a 1D profile or cross-section from a raster dataset. Is this what are you after?
This depends on the accuracy of the DEM and the distance measurement between the two main slopes of the mountain (base, middle or top). The thickness thus measured is all ralative.
You can use a distance tool for measurement, or making a topographic profil and show the distance on a map or the distance profile border to border.
