You can simply check your system by applying a very small voltage on the input of the sensor. It it worked continuously then it means that the contact of the skin probe is loose causing the interruption of the input signal. It is required that one has constantly press the electrodes to the skin.
Secondly these probes receives only very small voltages when the muscles are actuated.If the muscles are static they will not produce a measurable signal.

There could be various reasons for this particular problem. Please share the type of sensor being used (details). Following may be the possible cause.
1) Loose connection. Please check all the connections properly with any dry soldering etc.
2) Impedance mismatch /loading
3) Response time/ sampling problem
4) Synchronisation problem
These are generic problems. The actual problem can be analysed in a better way if you can share some more details
