I would also recommend Azumah Dennis and Lizzie Walker's current research which also brings in ethics to professionalism.

My doctorate in Applied Linguistics was on prefessional constructioin of Language teachers. Subjects were undergraduate students who wrote diaries about what they were learning and how that was happening. The analysis followed Holland's et al. (1998) suggestion about identity movements and the subjects' statements were analysed linguistically (based on several authors) and discursively (based on Bakhtin's work).
