Does anyone here knows whether the temperature of soxhlet extraction can be performed below the boiling point of solvent (in my case is water). I am currently working on the optimization of tannin using soxhlet extraction. If the temperature range use is below than water boiling point, is the concept acceptable? because as far as i know, soxhlet extraction only runs using solvent boiling point.

You're right in saying soxhlet extraction runs on solvent boiling point. It's assumed that the solubility of expected compound might be within that range of solvent boiling. If that so, interest compound will be extracted. However, if it's run below bp, it might not fully extract interest compounds. Since bp of water is 100 deg Cel., within the range, your tannin might not be extracted. Tannin melting point is higher than that of water bp.

If your question is about extracting tannins using soxhlet apparatus without boiling the solvent (below the boiling point), in your case water, it will not complete the cycle. Soxhlet works on the principle of evaporation and condensation. Boiling water in rb flask and running ice cold water in condenser may help you in extraction tannins.
The good thing about Soxhlet extraction is that is very efficient because the matrix in the thimble is always extracted with a fresh solvent not containing the extracted compounds. The bad thing is that the extracted compounds are at the temperature of the boiling extractant. If you are interested in the extracted compound and it is thermolabile, Soxhlet extraction is not useful. You can however put the whole system under a partial vacuum. Under lower pressures the solvent will boil at much lower temperatures.
If you are interested in removing compounds that you do not want from the matrix Soxhlet extraction is an excellent procedure.

The temperature of soxhlet extraction is entirely determined by the selected solvent because it is the boing point of that specific solvent. Any temperature below the B.P. results in a slow extraction because of the limited amount of solvent driven to the extraction chamber and be in contact with the sample. However, if you want to use water for the soxhlet extraction there will a continuous loss of the solvent (incomplete condensation) unless you use chilled water for the cooling condenser... Regards
There is another way out of the difficulty, but it is complicated. If you can do tge Soxhlet extraction under a partil vacuum the solvent will boil at a much lower temperature, but then you need a very efficient condenser to ensure that the solvent does not evaporate and pass through your vacuum system.
It is possible to lower the boiling point of the water by lowering the pressure. But by lowering the temperature the solubility will decline. If you add ammonia to your water you can lower your boiling temperature, but ammonia can react with your esters.
