Hi Juan, it is tough to answer without knowing what resources you have available. The first option that comes to mind would be a linear transducer, such as a TENDO unit. You could attach it to somebody's belt and have them do single-leg squats, or attach it to their leg and angle the transducer to get the power from a knee extension (as long as you can measure extension force).
