I'm looking for literature on the description of the gentrifieur as a consumer, in particular in food products.
The thesis of Smith is one of the first references (DP Smith, 1998, The revitalization Of The Hebden Bridge District: Greentrified Pennine Rurality), but it is old and not sufficiently precise on this matter.
The paper by A. Warde (1991, Gentrification as consumption: issues of class and gender) is also often cited, but I can't find the text. Someone would have it available?
And if possible, we also seek more precise studies of gentrification and short food suply chain. Because from a preliminary study (see abstract attached), we suggest that these ways of consumption are part of exchanges between producers-gentrifiers and consumers-gentrifiers.
