Most undergraduate texts on mechanics will address central force motion.

I had Kleppner and Kolnekow as an undergraduate some decades ago.

For detail, I recommend Archie Roy's "Orbital Motion".

What sort of depth/thoroughness are you looking for?

This Feynman lecture is propably the best introduction to this issue, it's an one hour video, and this link is to it's funniest point;

But though the many jokes, it's a complete explanation about how and why the current physical laws are as they are, even though we still do not know, what really causes gravitation.
