Industrial cultures are composed of strains that are isolated from natural products. Mutations occur in nature and it is a source of diversity. We isolate what we need (enzymatic activity, acidification activity, texture formation, flavor formation, etc)
As long as you can identify the target performance /metabolic activity, the origin is not crucial. Strains that belong to the same species, that are isolated in different parts of the world could have similar properties and very similar performance when cultivated in milk.
