I think you should be able determine oligosacchrides in honey with the same methods used in determining them from plants or legumes. Nowadays, there several methods for that ranging from HPLC-RID/ELSD to TLC (Thin Layer Chromatography). You will need to extract the oligosaccharides using ethanol and led acetate.

Use a BioGel P2 column to separate the glucose and fructose from oligosaccharides and concentrate them. Silica Gel G TLC with Acetonitrile:Water 4:1 to 6;1 should give you good separations of sucrose, raffinose, stachyose, etc. from the concentrated samples using authentic standards. A number of steps will be necessary if you want to characterize them completely.
