My Research topic is related to mental Health so I'm looking for journals focusing on this area. Journals should be those with high acceptance rate plus pubmed indexed and fast review process.

There was a time when some journals published acceptance rates and length of time for review but that's rare these days. I'd consider sending query letters to as many journals as you think appropriate for your article. Their responses will help you see who is very interested and might act quickly. Journals often have topics for future issues. If your topic fits, it might get processed quickly. Also, send query letters to the journals which published articles you reference in your article. There are some databases presenting different journals in different subjects. For instance you can use SJR (scientific journal ranking) to also see the ranking of each desired journal and their statistics. Also, you can use some journal finders which suggest some appropriate journals based on abstract and keywords. When you select your desired journals, you can see their websites (metrics/about the journal section for assessing database indexing, impact factor) to see the review process or the time from submission to first decision, acceptance to publications, etc.
Finally, please consider this point that due to this pandemic, review process might not be as accurate as mentioned in the journals' websites.

I tend to see which journals publish material on my subject matter. The references you cite should guide you as well as the impact factor. Typically, but not always, the lower the impact factor the easier it may be to have an article accepted. The turn around time is often mentioned on the journal's instructions to authors.
