If I read this abstract right, the researchers are collecting reading at visible region and correlating mostly with the color parameters and also with moisture content. I am not sure how one could correlate water feature at visible region as the band assign to water is at near 750 and 960 nm. Could you give some idea on how you correlated that with visible region?

Hi, I am sure that it is not possible to analyse the water content in the visible passbands by means of coninuous wave spectroscopy. In the visible you will see the extinction of photons at each wavelength, where the pigments absorb them. But it seems spatially-resolved readings were used: With this method, also changes in the scattering coefficients can be analysed.
In own experiments, we also saw changes in fruit tissue caused by changes in the water content. BUT, we measured on colourless tissue. Each appearing pigment molecule can perturbate the calibration. Consequently, for water analysis, wavelengths outside this optical window should be measured.
