I think that if you explain what is your expertise area, what are the topics you could contribute, what are your research interests, then you could find some partner to publish. Your request is very general and ambiguous.
My advice is to lead with an area of expertise. These areas you just listed seem too vague for you to have the amount of experience that some authors may be needing, except you hold a degree in each of them.
I reckon you need networking, which is part of what we try to do here. It's a "soft skill" critical for climbing the ladder. The higher you want to get on that ladder, the more important networking becomes.
The first time I contributed to a book chapter I was writing my PhD thesis. An editor with whom my mentor had previously worked, invited him to contribute a chapter to his latest book. He was busy with grant proposals, and my thesis topic was a perfect fit. So he let me do it, earning his co-authorship by providing mentorship in writing my first chapter.
So, I recommend you talk with the co-authors of your previous publications and collaborations. Have they done book chapters? Can they hook you up?
Also, if you get to a big meeting with exhibits go to the publisher booths and tell them you're a gifted and successful author looking to broaden your portfolio.
Let me point out that book chapters are often highly cited. Mine definitely are my most-cited works. But they're not peer-reviewed. So on your CV they are listed under "Other."
