I suggest using the Landsat thermal band. It is a very reasonable spatial resolution. Hope it helps.

Sentinel-2 can detect chlorophyll and water content indexes effectively. It design does not capture thermal bands

You can calculate LST by using Google Earth Engine (GEE). It very easy and time saving task because Level 2 data is available.
