A good introductory text on evolutionary game theory is Peters (2008), Chapter 8.
In terms of economics, the name that comes to mind is Peyton Young. For example, his "The Evolution of Conventions" article and "Social Dynamics" book.

I would look at McElreath and Boyd's Mathematical Models of Social Evolution as well as Gintis's Game Theory Evolving. The latter is at a slightly higher level than the former. Both have been very useful for me.

But Evolutionary Game Dynamics is different from Evolutionary Game Theory!
I think that Evolutionary Game ِDynamics look evolutionary games based on dynamical system.
You can also try the introductory book by Karl Sigmund entitled "The Calculus of Selfishness" , Princeton UP.
My colleagues have developed an open source simulation gamin system named U-MART. This is an abreviation of Un-real Market as an Artificial Research Testbed.
This is used in education for various purposes: introduction to finance markets, first step programming training in Java, developing new programmed strategies in technical analysis and so on. In researches we use it on micro-structure, statistical properties of price movement, evolution of strategies and evolution of behavior of the market itself and others.
The special feature of U-MART is that human agents (for example, newly coming students) can play as participants at the equal footings with computer agents (machine agents). U-MART has a very good GUI (graphic user interface).
We have published in 2008 a book by Springer:
Artificial Market Experiments with the U-MART (with CD).
U-MART program is developed as open source material on the GNU base. If you want to use it for academic use, you can get it from our colleagues. Please take contacts with Hajime Kita, or Yusuke Koyama in the ResearchGate.
The best high level book is Bill Sandholm's Population Games and Evolutionary Dynamics. An introductory text by Nowak may help. Barry Sinervo and I are putting the finishing touches on an applications-oriented text Evolutionary Games in the Natural, Social and Virtual Worlds that should be available by the end of this calendar year.
