The entry barrier for steganography and steganalysis is rather high today. The research community is not looking for yet another twist to hide information. There are several hurdles which have been identified that need to be addressed. The obvious starting point is the website from Binghamton's research group led by Jessica Fridrich, that includes several resources (dataset, source code, etc) to avoid starting from scratch. Her book or her chapter in Cox's book are also valuable resources. I would also recommend that you look up the article titled "Moving steganography and steganalysis from the laboratory into the real world" which summarizes the views of some experts in the field during a panel discussion in 2013. Another option is to go for a completely different medium that images (audio, video, network packet, etc) and to investigate how the different findings for images translate for these new cover content. Steganography and steganalysis require a strong background in statistics, machine learning, and digital communications.
