IR absorption of the sample is due to the functional groups present in the sample. so interpretation possible only if you know what are the functional groups present in the material. any way the broad absorption 3000-3300 Cm-1and 1650 are due to the presence of water groups . if the sample have CO2 group, absorption around 1620, 1320, 1480 are due to the stretching modes of CO2
look ,the interpret of IR depends on the type of reaction .what you have and what you do . generally you may have OH groups more than one , CH aliphatic , also aromatic , you can see presence of (C=O) ,and aromatic system . you need to check the H-NMR, MS of your sample to make full identification.
A quick look shows bands typical of cellulose, and maybe some protein I think, and there seems to be a significant amount of water too. If you have some cellulose you could record a spectrum of it and subtract it from this spectrum; this would enable a better estimate. Better still, do you maybe have access to a spectral database?
