Considering the difference in the 1H NMR shift of methylene group protons adjacent to the carbonyl group in oleic acid and methyl oleate, can I use 1H NMR spectra, instead of GC analysis, for calculating the conversion of oleic acid to methyl oleate? It won't be easy from the alpha methylene, as it overlaps the alkene vicinal protons. Similarly, the carboxylic acid proton will be broadly and tend to under integrate relative to other protons as is in solvent exchange. Your best bet is picking up the additional methyl group of the forming ester at ~3.6 ppm and integrating that relative to the terminal methyl group of the fatty acid/ester at ~.89 ppm.
