I remember that the sanctuary at Daroca (Aragón) since the 13. century A.D. is an important place to be reconsidered. There is sureley a lot of bibliography related to the place and ist also connections to Bolsena and Walldürn.
Geoffrey: You can find a detailed and well-documented description of the origin, development and sixteenth-century changes in the liturgy of the Corpus Christi feast, from its origins in the Western Church around A.D. 1000, here:
Pascher, Joseph, El año litúrgico, Daniel Ruiz Bueno, translator, Madrid, La Editorial Católica, 1965, pp. 290-309.
This is the Spanish translation. The origial edition, Das liturgische jahr, is in German (Munich, Max Hueber, 1963).
This provides useful context; perhaps tracking down some of Pascher's sources would lead you to something more specific.
