Best way to represent and analyse Date and frequency data representation ?

I have a data with dates and frequency of people for which medicine worked on that day. What could be the best way to and analyse Date and frequency data. I have used moving average. I wanted to know if we can calculate some kind of confidence interval to represent the variation of the frequencies.
