I am afraid to recommend the books or videos because I am not sure how much knowledge you have about LaTeX.

I assumed that you have already installed the latex program and editing program (like 'texmaker').
In my view, the beginners are learning by
1) find a typical latex example file for a paper or book in your field (there are many)
2) change the author's name and the contents
3) If necessary, look at the above guidebook.

It is very useful.
I would suggest working with texstudio and overleaf. And for books, my best suggestion is 'the not so short intro to latex', and 'latex in 24 hours'. For Greek books, I have a couple more suggestions as well, as I have also written a book myself.
What do you think of xelatex ? I have heard the PdfTex is not supported anymore.
I have never worked on xelatex. I always just used the classic texstudio with the default settings. So just straightforward latex, and i don't remember having any major issues
