I am looking for a successive approximation ADC that allows selection of conversion resolution, preferably so that a low-resolution conversion is quicker than a high-resolution conversion (which should be possible, considering the successive approximation principle).
Actual conversion rates and maximum resolution are not so important.

Why do you need variable resolution ?
I have not seen variable resolution SAR ADCs, but if you have a high speed ADC that has enough conversion rate, you can realize a look-alike with some digital circuit.
I do not need it to be variable on-the-fly, but I am looking for the ability to set whether i want, e.g. 6 b per sample / 100kHz or 12 b per sample / 50kHz.
Yes, I could simulate it with some fixed ADC and then decimate by half to simulate high resolution / low rate resp. cut off half of the bits from LSB to simulate low resolution / high rate.
You can use TI ADS 7818 serial ADC with 500 KSPS sampling rate., 12 bit resolution. Other serial ADC ADS 7883/7886 (1 MSPS sampling rate ) can also be useful.
The possibilities offered by "short-cycle timing" this device indeed seems to offer what I am looking for, thanks!
