Can anyone recommend an audio recorder (Sony, Olympus, etc) that can be locked with a pin or password? Or are participant interviews generally secured by some other means, such as transferring recordings to a password-protected computer (and deleting the original file) immediately after recording?

There are some that offer encrypted recordings and some with password protection (https://www.amazon.com/Recorder-Activated-Password-Protected-Recording/dp/B07L4MG14S). If you are using a smart phone, then doing as you suggested to transfer the data to a password protected computer offers another alternative. One thing to look into is how large a file size you can transfer between devices. Some allow for emailing for instance but only within a certain size. Good luck!
If you are doing one-to-one interviews (rather than focus groups), then I would definitely recommend testing whether you can use a smart phone to record these interviews.
Typically, we might record using a Dictaphone or a smartphone, transfer the audio file to a secure password protected drive after recording, and then delete the recording once it has been transcribed.
