Has any work been done on using Artificial Intelligence /Machine Learning techniques in the kinds of games used on to teach strategy to business classes?
to imitate human players / provide realistic opponents
evaluate human players (e.g. using variance reduction techniques to get estimates of players' skill quicker)
I have not seen any serious games in Management that use AI.
I would recommend you take a closer look at the games proposed by Apics (https://www.thefreshconnection.biz) and ERPsim (https://erpsim.hec.ca/en/erpsim).

: Those MOBA tutorial agents were interesting. So, these ideas are being explored in entertainment games. I didn't get a chance to read the Hildman paper yet but the abstract looks like it should be interesting.
Mohamed AbdElAziz Khamis : The idea of AI driven design is one I like. But in educational games, I can see an advantage in an AI playing through the boring parts of a simulation and with the student replacing the AI for the most important and educational decisions.
