Any tips from fellow academics on innovative teaching in technical writing courses?

The courses I'm concerned with are 100 level at a two year/one year/certificate school. The only writing classes these students are required to take (not to mention the only writing credits they'll have time for) are either both the courses I teach, the one being a prerequisite to the other only if they don't test high enough on their writing intro tests. I'll be working with students in fields involving computer science, welding, automotive, nursing, and a few other trade-like careers.
