Do you mean manual for statistics software or statistics textbooks. As far as manuals, the SYSTAT manual is both good (because Wilkinson explains things well) and psychology relevant (because he was in a psych department). If you mean textbooks start a new discussion.
I think the best way to learn statistics is to get on the path to a real project and work with real data.
Fortunately, statistics in psychology is very old, and for this reason you can find a wide variety of information by searching for reliable sources.
First read the basics of statistical analysis in psychology. Then, according to each method of data analysis (for example, regression, analysis of variance, etc.) search and read the relevant article and then watch the video. The most important thing in this method is to make sure that your search is from reliable and popular sites.
For example, to learn regression and its types, first study its theoretical foundations from a reference (a valid article) and then find a suitable video of it.
If you prefer a book, I recommend choosing books that are more practical.
As you are Spanish, I recommend classic manuals, understandable and unless it is Spanish (some, although they say as "Experimental Psychology", are valid for their objectives):
