Can anybody describe me how to achieve different degree of hydrolysis by altering the hydrolysis conditions (i.e Enzyme conc., Time, Temperature, pH)?

After the preparation of hydrolysate, I want to fix the degree of hydrolysis (i.e., 5%, 10%, 15%)
