Has anybody already managed to create stable water in ethyl acetate emulsion? Which surfactant did you use?

I am trying to do water in ethyl acetate emulsion. The water droplets fastly coalesce even with Span80 surfactant. Has anybody tried to realize that? Thank you for your help
