When is the best incubation time of the bacteria, to know the dry mass ?

Mostly the incubation time of bacteria is 48 hours. But, if i want to know the dry mass of the bacteria. So, how long i should incubated it? is it 24 hours, 48 hours, or in the mid log phase?...
