What is the mechanistic action of crayfish diet (animal protein) on serum biochemical and heamatological parameters of animal fed same diet?

I carried out a research by feeding rats with crayfish diet. So was asked to show the mechanisms of how the crayfish (animal protein) in diet modulates serum biochemical and heamatological parameters.
