Is there any bromelain from certain types of pineapple which is unstable (labile) at low temperatures but more stable at high temperatures?

I'm doing characterization of optimum temperature for bromelain enzyme from Bogor pineapple by measure the activity of the enzyme. I used casein 1% as substrate dissolved in universal buffer pH 8....
