I need to ask question about HbA1c SI unit (mmol/mol). It is mmol glycated hemoglobin/ mol of what?

I have measured HbA1c in plasma using ELISA KIT, I got the results as nmol/L, and I need to convert it to SI units or to percentage (%) to be able to compare them with the literature.
