The optimization of the prototype filters for double dispersive channels (with a knowledge of the Doppler spectrum / maximum speeds) is one of the key points for choosing FBMC/OQAM over CP-OFDM for V2V applications. Depending on the scenario, there might be further benefits, e.g. when you desire a tight spectrum sharing between many devices / application profiles in a V2V context.
Ideally, when designing the filter, you should already be aware of the dispersive properties of the channel in both time and frequency dimension. This is why the Doppler spectrum needs to be predicted, e.g. by estimating the movement properties of the system.
