There are several possibly contradicting points to reconcile. First off, it makes sense to choose the research subject you would be involved well beyond your theses. Second, you ought to be pragmatic in a fair assessment of your actual research strength and qualification to complete theses within a reasonable time frame. Third, you ought to assess as to how well your current support environment commensurate with the topic you may have chosen.

If you are good at writing and simulation, the first looks better. Otherwise if you are good at coding, then maybe better off choosing the second.

Choosing a topic is not always that easy as it seems at the first place!

Choosing a topic because it is a hot one may be misleading, since working on hot topics usually implies more work load (reading a lot, being up to date, ...).

I would rather say you should not choose a topic only because it is hot, but also because you are comfortable with it, you have a minimal background that can help you get into it, you have supervisors that deeply understand it, ...

As far as I am concerned, both topics sound very interesting.

Both topics are interesting. AI in cybersecurity is wider and more general. However, if you choose Mobile Apps, you can include AI in your sub-chapter.

There is a lot of general information on both topics. Consider how your research will affect a particular industry or field of expertise. Consider, for example, how algorithms and artificial intelligence could improve health care cyber security.

All the above seem helpful. I think you want to focus on the AI in cybersecurity angle. My first recommendation would be to read A Thousand Brains: a new theory of intelligence by Jeff Hawkins. Then my guidance would be to study emerging models of cybersecurity where practitioners are looking into (there may be some), using (there may be outliers) or thinking about (there may be more than a few) using neuroscientifically informed or biomimicry approaches to AI for cybersecurity. At the moment, from what I see, while not denying their usefulness, most AI is actually machine learning and is all about speed/performance, greater quantities of data, and predictability. The AI of the future (this is what you will confirm of refute in your thesis) will based upon how the human brain really works and will thus adapt to contexts, will learn from both its own and others' experience, will imagine scenarios that have not existed before but could be feasible, etc.

as you might now, there is already plenty of literature regarding both topics available. You should have a deeper look into existing literature, construct the research questions and then decide which topic to chose. Cyber security and AI definitively contains more currently hot topics than app development.

Well, I find both topics useful and relevant, as you wonder, but I think the first one (incorporating AI in cybersecurity) is too wide. I mean, a topic for a PhD should be a concrete problem or statement to solve or prove. So you could use this topic, but focusing in a concrete aspect of cybersecurity to be supported by AI. The second one is more concrete, but a bit complex at a glance.
