One of my mentees research interest is spirituality & spiritual care. We have found some questionnaire used in past studies, however in order to take a decision on which would be appropriate to use in the current study, we would like to share the experiences of other researchers who have worked in this area or have authored instruments on this topic.

Spirituality has a very wide range of meanings. For example, spirituality that interests a new age practitioner may have nothing in common with spirituality as described by an evangelical Christian. Whatever instrument you choose, make sure it's measuring the type of spirituality that interests you.
Which is the best instrument for measuring perception of spirituality? I think there is no instrument to measuring of sprituality, spirituality can be felt with heart. So there is we can speak about susceptibility of spirituality. susceptibility of accuracy or to falsehood..
Have you done a search in Google Scholar?
More particularly, have you done a search in the Pastoral Care literature. The senior journal in this field (1947 forward) is The Journal of Pastoral Care & Counseling published in partnership with SAGE Publications by Journal of Pastoral Care Publication. You will find a number of books listed at the website of the latter organization (www.jpcp.org) that may be helpful.

I agree with Hendrika and David that you need to either define Spirituality as you researchers understand it, or develop scales that allow for participants to choose among different (and differing) aspects of what can be termed Spirituality, so that they define it in their own way. However, this second path might be more complicated when attempting an objective measurement of ongoing spiritual practices carried out by nurses in the process of caretaking, but I think it can be manageable by separating multiple-options questions from open questions. That way, you could tabulate MO questions and still have some room for clarification from the OE questions.
Love that you're interested in this, for the nurses' influence on the patients is greater than that of doctors, and because nurses need to cope daily with the fact that they have a front row seat to witnessing human pain and in trying to alleviate it through their professional intervention.
