I need a table where I can find which parameters are used for each of these Force Field, how they are defined and their respective values.
If you have GROMACS installed, you can cd to:
/usr/local/gromacs/share/gromacs/top
and there you can find parameters for these force field (at least for the starting point).
I use TINKER.
In TINKER there is a directory called "params" where all the force fields parameter files of TINKER are found. There you will find several versions of OPLS and CHARMM. Inside those files you will also find bibliographic references. I am attaching a ZIP file of all the "params" directory (it is from a relatively "old" version of TINKER - version 4.3) but for your purposes may be good enough. If not, download the most current version from TINKER's website.
