After completion of foam mat drying of the product, the product is grinded into powder.what will be the micro-structure of that powder? will SEM image will help to get this? Will there be significant difference in structure than powders dried by other methods.?

Well, the structure will be different from other types of drying say freeze-drying or spray drying. As John mentioned it is function of roller types and particle size also. You can use SEM so you can find shape and size of the particles.

You can use SEM to observe the morphology and size of particule in order to know the microstructure.
