I am looking into learning a programming language (take a course) for use in image analysis and processing for real time application. Which language should I go for? C or Java or c# or opencv or C++? Also please explain why either of the languages is a better option for my application?
Java would be wonderful in sense of script line comparison and the visualization. In sense of matrices operation (instead of programming language) I prefer some packages such as MATLAB. It is subjective, though.
I have used MATLAB to do some image processing and pattern recognition exercises.

matlab is best for designing an algorithm, because matlab is working best with matrixes (an image is 2D matrix). but matlab is low speed, so for implementing your algorithm you must convert that to C++ or C#. these two language is powerful programming languages and has many library for image processing, such as openCV, EmguCV and etc. but have hard programming versus matlab.
so you learn matlab and try to design your algorithm with this, then convert that to C++ or C#.
Matlab is easier to start. I like Python because is free and it is based in Java.
For image processing and analysis using MATLAB, a toolbox is available from the University of Delft NL (http://www.diplib.org/). DIPimage is a MATLAB toolbox for scientific image processing and analysis. DIPlib is a platform independent scientific image processing library written in C. The toolbox/library is very useful and free for non-commercial use (Universities ...). This is an alternative for the expensive MATLAB image processing toolbox.
For image processing and analysis I use c# and c++ , because they are faster and powerful, c++ and c# have a very good pointer work , so you can access directly to the memory and process the value, so the time to made all operations are lower than other languages like java or matlab in which you have to obtain a value from the memory and process. For enterprises software or to made tests in a real environment a powerful language is needed.
Better you can utilize MATLAB. It is very easy to learn and provide powerful manual which will help you throughout.

I agree that Matlab has great prototyping capabilities, but if you want something with decent speed, C++ (maybe with CUDA) is the way to go. Since nobody mentioned it, the Insight Toolkit (ITK) has already many image processing pipeline elements implemented and you only have to plug them together. I would recommend to learn C++, it is invaluable and will bring you much further than just scripting around with Matlab.
Matlab is a suggestive option both for starters and for research. Easy to learn and, has compatibility with hardware, other languages like c, c++, java etc. The image analysis aspect can be carried out extensively with the image processing toolbox.

I use Embarcadero Delphi XE5 with the excellent component ImageEn. http://www.imageen.com/
It allows out of the box doing so many things which in other libraries are not available.
It is fast and reliable.
I prefer C++. It is fast and there are several native helper libraries (OpenCV, CUDA for GPGPU porting, etc.).
Most frefered language is Matlab due to flexi performance and bulk of inbuilt functions. Libsys, openCV, CUDA, C, C++, Java and even Visual Basic is also suitable for programming. Matlab is good for students and for developers, C language is the most suitable.
If you want to program in Matlab then you must install Image Processing Toolbox.
C#.net is good for developing desktop image processing applications like watermarking....etc

i think c++ is easy to learn and you can use opencv library files.That contain existing image processing algorithms.
The programming language depend of your needs, if you want to prove something or if you're investigating something matlab can be your choice, but if you are trying to develop a software the better choices are c, c++, c# and java
To start for the beginner, Matlab is the best. For online image or video processing, C++
is good.

In sense of the (programming) language, you may prefer Java. But in sense of the (programming/processing) tool, Matlab is very recommended. We may use Matlab to process any digital images easily.
I think we can use java becuse it easy to learn and good better for image prossising
