Suppose we have two Sentinel-1 SAR data sets capturing a scene at the same time, one is from the ascending orbit and the other one from the descending orbit. Does these two data sets provide the same backscattering coefficients at VV and VH Polarization? If not, is there a way to calibrate them?

Ascending and descending orbits are different parts of the orbit with the same incidence angle range. Basically, the backscatter coefficient relies on numerous orbit characteristics. Both the physical parameters of the area and incidence angle affects it. Depending on the local incidence angle, backscatter intensity varies. Yes, Ascending and Descending orbit data do have an effect of different local angles of incidence on the backscatter coefficient of VV and VH polarization. So you can analyze that effect using both the orbits for the same day.
